The Champignon d’hiver is a locally grown premium grey oyster mushroom.

Available at a dozen IGA grocery stores in the Vaudreuil region and west of Montreal, the Champignon d’hiver is currently in a market test period. The goal is to validate the demand for such a product in order to integrate it into the Winter Farm market gardening portfolio.

The lab

The Champignon d’hiver is produced by our partner Amelium Farms in Saint-Lazare, Québec. 

Located near the Vaudreuil Winter Farm, the lab allows us to test different variety such as the lion’s mane and the mini king oyster.

Water, air, light and humidity are controlled to provide the best possible yields.
